The 52 Clove Garlic Soup Recipe
- 26 garlic cloves (unpeeled)
- 2 tablespoons olive oil
- 2 tablespoons (1/4 stick) organic butter (grass fed)
- 1/2 teaspoon cayenne powder
- 1/2 cup fresh ginger
- 2 1/4 cups sliced onions
- 1 1/2 teaspoons chopped fresh thyme
- 26 garlic cloves, peeled
- 1/2 cup coconut milk
- 3 1/2 cups organic vegetable broth
- 4 lemon wedges
Preheat your oven to 350°F. Place 26 garlic cloves in a small glass baking dish. Pour 2 tablespoons of olive oil over them, and sprinkle with sea salt. Mix everything together. Cover the baking dish tightly with aluminum foil, and bake it until the garlic is golden brown and soft, about 45 minutes. Once it’s done, take it out and let it cool. When it’s cool, squeeze the garlic between your fingertips to get the cloves out. Put the cloves in a small bowl.
In a heavy saucepan, melt some butter over medium-high heat. Add onions, thyme, ginger, and cayenne powder and cook until the onions are clear, about 6 minutes. Add the roasted garlic cloves and the 26 raw garlic cloves, and cook for another 3 minutes. Pour in some vegetable broth, cover, and let it simmer until the garlic is very soft, about 20 minutes. To make the soup smooth, put it in a blender in batches and blend it. Put the soup back in the saucepan and add some coconut milk. Sprinkle sea salt and pepper to make it more flavourful.
Squeeze a lemon wedge into each bowl and serve!
My Variation: Smoky Red
For my twist on the 52 Clove Garlic Soup, you will need the same ingredients as the original recipe. However, you can add a few extra ingredients to give it a unique flavor.
Try adding a teaspoon (or more to taste) of smoked paprika, a pinch of cayenne pepper, and 2 tablespoons of tomato paste.
